Those who ever cooked or are in the kitchen all day long know the stress associated with leftovers!

Knowing the resources would go in the trash makes us a little uneasy for sure. Is there any rice left from last night?

Leftover rice piled up in your refrigerator because you do feel not good to throw it away?

I can feel you! That is the very reason why I have come up with this read right now. 

I mean you must be familiar with leftover rice recipes like chicken fried rice and other non-veg options, what about vegetarians?

Yes, in this very read, I will share with you some vegan recipes using leftover rice which are quick to make and fulfilling to eat.

Here it is:

Rice cutlet


What all you need:

  •  Leftover rice
  • Mashed potatoes- ½ cup 
  • Gram flour (besan)- 3 tbsp 
  • Finely chopped onion- ⅓ cup
  • Finely chopped green chilli (1 or 2)
  • Finely chopped coriander leaves
  • Red chilli powder – ¼ tbsp
  • Coriander powder- ½ tbsp
  • Turmeric powder- ¼ tbsp
  • Cumin powder- ½ tbsp
  • Garam masala- ¼ tbsp
  • Salt
  • Oil 


  • In a bowl take the mashed potato and add leftover rice and mix very well.
  • To this add all the veggies and powders one by one and mix well. 
  • Now add the gram flour step by step and mix them all together into a fine mix.
  • Take a small portion of the mixture and make small-sized patties or tikkis from it.
  • Heat oil in a frying pan and place the tikkis we made one by one.
  • Flip them when the base is lightly browned and cook each side thoroughly 
  • Take out them on a  kitchen paper towel and serve it hot with any chutney or ketchup.

Mushroom fried rice

What all you need:

  • Leftover rice
  • White mushrooms sliced- 1 cup
  • Olive oil -1 tbsp
  • Garlic minced- 2 
  • Finely chopped onion-2 tbsp 
  • Green chillies- 2
  • Bell pepper sliced- ½ cup
  • Soya sauce- 2 tbsp 
  • White vinegar– 1 tbsp
  • Black pepper powder- ½ tbsp 
  • salt as per taste


  • In a large skillet/ wok heat the olive oil and add the minced garlic and saute it.
  • Now, add onions and green chilli and cook for about 2 minutes till the onions are soft.
  • To this add sliced mushrooms and capsicum and cook until all the veggies are nicely cooked and dry.
  • It’s time to add the soy sauce and vinegar. Saute them regularly without getting burnt.
  • Now add the leftover rice, salt and black pepper.
  • Mix them gently and serve them hot. 

Rice pudding dessert

What all you need:

  • Leftover rice 
  • Sugar -½ cup 
  • Any milk -2 cups
  • Cardamom powder- ¼ tbsp
  • Vanilla essence- ¼ tbsp
  • Chopped nuts (almonds, cashews, pistachios etc.)
  • Saffron strands (optional)
  • Dried rose petals (optional)


  • In a pan take milk and sugar and heat them for a few minutes.
  • Add leftover rice and mix well. Let it cook for 15 to 20 minutes on low to medium flame.
  • When the mixture looks simmered, add cardamom powder, vanilla essence and chopped nuts and mix well.
  • Now turn off the heat and take it out and let it cool.
  • Garnish with saffron strands and dried rose petals and refrigerate it for at least one hour.
  •  Take it in a small bowl and serve it as a dessert.

You don’t have to throw away the leftover rice anymore. Anyone will love these recipes and they will never know it’s a leftover one.
